Here in the midwest, this is a perfect time of year to celebrate eating your vegetables. There are many different fresh, local vegetables that ripen during the month of June.
Here is sampling of the vegetables, we were able to harvest from our garden just today: Sugar Snap peas, carrots, Red Pontiac potatoes, lettuce, Yukon Gold potatoes, and shell peas. Earlier this month we also harvested an abundance of broccoli. We were able to enjoy fresh broccoli and freeze several gallons of excess that we will continue to enjoy throughout the year.
Different vegetables have varying compositions of vitamins such Vitamin A, Vitamin K and Vitamin B6. They also contain essential nutrients and minerals which help improve overall health. Some vegetables even have antioxidant, antibacterial, antifungal, antiviral and anticarcinogenic properties. These are all great reasons to eat your vegetables; but let’s be honest, we really want to eat something that tastes good. Thankfully, there are many different ways to eat vegetables whether raw or cooked, in which, they taste delicious.
If you don’t have a garden of your own, now is a great time to visit your local farmer’s market and pick up some healthy, delicious vegetables. Or if you are interested in gardening, it’s not too late to start. Many varieties of vegetables can be grown for a fall harvest. Check with your local extension to find out what types of vegetables you can plant and the recommended planting dates.
