The weather is warmer, the flowers are in bloom, baseball season is in full force, and I’m wearing sandals. The month of May is such an exciting time of the year. Another school year is coming to an end, and the anticipation of summer is on everyone’s mind. It’s also that time of year when you start gardening, fixing up the outside, and getting that barbeque pit ready.
Since my hubby is the meat master at our house, I usually take on the sides dishes. Summer is a great time of year for many side dishes and salads because there are so many awesome vegetables and fruits in season. We eat a lot of berries in this house. Blueberries, blackberries, raspberries, and strawberries…we love them all! However, one of my all-time favorite summer vegetables is zucchini. In fact one year, we grew zucchini in the backyard. It was so much fun to plant the seeds with the kids and watch these vegetables grow and come to life.
Side dishes and summer salads are ideal because most of them can be prepared at home in advance. Plus, if you do garden or visit the local market for your produce, I’m sure you are always looking for ways to incorporate those vegetables and fruits into your meals. I’m sharing a few of my favorite salad and summer dishes from The St. Louis Cooks. These recipes get me super pumped for another awesome summer season!
